Illinois Stewardship Alliance is asking farmers and cottage food producers to describe barriers to growing their businesses under Illinois' cottage food law. The law generally requires cottage foods to be sold directly to consumers, allows shipping only for shelf-stable foods, and does not allow refrigerated vending machines. Yui Alde runs a farm-based fermented food business near Shabbona with two employees and more than 25 varieties of products. She says a building renovation was estimated to cost more than $500,000, while converting her garage into a commercial kitchen would cost $400,000.
Why this matters: For rural farms, limits on sales channels and a lack of affordable commercial kitchen space can make it harder to scale value-added food businesses. The story collection may give policymakers information about those barriers.
