In-store bakery operators must balance product selection, displays, packaging and pricing to build a department that attracts shoppers and supports revenue. FMI, The Food Industry Association, said in its The Power of In-Store Bakery 2024 report that shoppers weigh price alongside quality, convenience, relevance and experience when judging value. The report said sale specials can lead shoppers to switch brands, buy unplanned items, try a different product type or make a first-time purchase. Retail strategy adviser Jonathan Raduns recommended contrasting display colors, risers, baskets, product sampling and fewer, easier-to-shop selections, while warning that excess packaging, over-merchandising and mixed fresh and clearance displays can reduce appeal or revenue.

Why this matters: Independent grocers can use bakery layout, sampling and promotions to compete on more than price. The article also points to a need to manage selection and clearance displays so shoppers can find products and fresh items do not lose attention to discounted goods.
